Meanwhile, the Hangi pit, full of railway iron, is burnt to coals to
create immense heat.

The hangi food is prepared. 2 pork, 4 legs of lamb, 2 blade roasts, 8
chooks, 2 pumpkins, 1 sack of spuds, and an 8Kg Dhufish.

The whole lot is wrapped in banana leaf, then dripping wet calico.

In goes the pumpkin on the top layer.

Then the fence wire is sealed up to hold it all together.

Styx throws some water on the hot irons to start steaming it up.

It took 4 of us to lift and lower the food in. Styx very bravely
balances on a plank above the scorching metal.

Hessian bags were soaked in the river overnight, then used to drape over
the pit, to help steam it up, and keep the dirt out.

Finally, the pit is covered completely with dirt, to seal in all the
steam, and hence "pressure cook" it.

Meanwhile, the kids enjoy having a swing over the river.

The hangi pit fully sealed at about 12:45PM. Now all we have to do is
wait 6 hours!
